Here it is: maintaining my blood sugar. That’s so hot, isn’t it?

But seriously, a girl can’t focus on busting out a killer trick pass if the blood sugar has plummeted. I don’t like cooking, so I came up with what I call my “stand-by” - my chicken crock pot concoction. This easy recipe and preparation is my ride or die because it’s a healthy meal that’s:

  1. easy to make;

  2. easy to re-heat in a tupperware;

  3. gives me the balance of protein for building muscle and carbs and fat for energy;

  4. is inexpensive;

  5. keeps me full during the day so I don’t fall prey to my sweet tooth as frequently, allowing me to maintain a good weight (gotdamn though I do love me some of those shortbread with icing cookies from Publix).

Are you even ready for all that???

...can you even call this a recipe? It's too easy to be called that.

I basically just pour a bunch of stuff in a crock pot and then turn it on. Oh, I mix it, too. Can't forget to mix it.

I even made a video of exactly what to do. I’ll post the ingredients I use, too if you’re too lazy to watch the video (but watch it, mmkay! I did make it and edit it for you all, you’re very welcome.)

When chicken is done, it will be amazingly soft and moist - I mash it up with a spoon so it makes a stew-like consistency. This makes it really easy to heat up and eat during the week.

STUFF I PUT IN CROCK POT

  1. Lentils

  2. Black Beans

  3. Quinoa

  4. Campbells Cheddar Cheese Low Sodium

  5. Rotel Low Sodium

  6. Mrs. Dash Original Seasoning

  7. Boneless Chicken Breasts

  8. Water

  9. Peas (put the peas on during the last 45 minutes of the slow cook)
